Beets Skordalia


A nice salad dish that can be eaten hot or cold.


1 kilo beets 2 tbs. vinegar
Skordalia Sauce: 4 crushed garlic cloves
6 tbs. olive oil salt and pepper

Clean and wash the beets. Remove the stems and leaves. Boil the beets for 40 - 50 minutes, or until tender. Strain them and remove the skins while they are still hot and cut them into slices.

Mix all ingredients together to make the sauce and toss with the sliced beets.
