Onion Fritters /
stuck for a side dish or a snack, this is great. It seems
there are always onions on hand.
1 lb. onions – ½ grated finely and ½ chopped coarsely
1 lb. all purpose flour
½ cup finely chopped fresh mint
salt & pepper
oil for frying
In a mixing bowl, toss together the onions, mint, flour and
salt and pepper. Add enough water to make it into a paste.
Heat oil in a skillet. Drop by spoonfuls into the hot oil
and fry until golden.
