Orzo in Tomato Sauce / Kritharaki
Our tae-temptress, Sylvia Kalikas has
given us her own special recipe for this mouth-watering Greek
Orzo Macaroni (available in Greek specialty shops)
|1/2 cup olive oil
||4 large tomatoes,
|1 large chopped
||salt and pepper to
|1 cup dry white
In a large pot, fry the onion in
the oil until golden brown. Add the wine and the tomatoes and
sautι for 5 minutes. Add 2 liters of water and bring to a
boil, letting it cook for about 15 minutes.
Add the Orzo and cook for an
additional 15 minutes. Remove from the heat and let it stand
until the juice has been absorbed.
Serve with grated cheese as a
side dish or as an entree.
Long grain rice can be substituted for Orzo.
