Island Potato Salad /  Patatosalata Brasti

A simple, but flavorful side dish.
1 kilo potatoes salt and pepper
1 large onion olive oil
1/2 cup chopped parsley  

Clean and boil the potatoes until tender.  Strain and let them cool down enough so that you can handle them and cut into 1 inch chunks.  In a large bowl, toss together the potatoes, onion and parsley with enough olive oil to coat it all. Add salt and pepper to taste.

Susie's note:  This salad is exceptional when served warm.
