Island Potato Salad /
A simple, but
flavorful side dish.
|1 kilo potatoes
||salt and pepper
|1 large onion
|1/2 cup chopped
Clean and boil the potatoes until
tender. Strain and let them cool down enough so that you can
handle them and cut into 1 inch chunks. In a large bowl, toss
together the potatoes, onion and parsley with enough olive oil
to coat it all. Add salt and pepper to taste.
