Lettuce and Radish Salad/ Marouli me Rapanakia Salata...

The fresh vegetables in this salad give you the taste of Mediterranean springtime.


1 head romaine lettuce 1/4 cup chopped parsley
5 spring onions, cleaned and thinly sliced Lemon oil dressing
10 radishes salt and pepper
1/2 cup Feta cheese, crumbled  

Wash and drain your vegetables. Bunch the lettuce leaves together and cut them cross wise into 1/4 inch wide strips into a salad bowl. Cut both ends off the radishes, but dont peel them. Slice them into thin circles. Add them to the salad bowl along with the spring onions, feta, parsley, pepper and the dressing. Toss it all together and taste it for saltiness. Feta is a salty cheese, so dont add more salt until you taste it.

Susies Note: If you dont like the traditional parsley in this recipe, you can use fresh dill weed or a combination of both.
