Ingredients:
4 smoked
herrings
milk
1 lb. potatoes, cubed and boiled
1 onion, thinly sliced into rings
1 green pepper, thinly sliced into rings
1/3 cup chopped parsley
4 tbsp. olive oil
2 tbsp. vinegar
Soak the
herring in enough milk to cover them for 8 hours. Drain them;
remove the skin and bones then cut the fillets into small
pieces.
In a large
mixing bowl, toss the potatoes, onions, green peppers and
parsley with the herring and the oil & vinegar. You may add
salt and pepper to taste but smoked herring is a very salty
fish so try it first.
