Tzatziki
This versatile appetizer
is a great accompaniment with roast meats, salads, entrees,
vegetable dishes, or just as a
bread spread.

Ingredients: |

| 1 1/2 cups strained
yogurt |
1 tsp. salt |
| 2 medium sized
cucumbers, peeled and shredded |
3 tbs. oil |
| 4-6 crushed garlic
cloves |
1 tbs. vinegar |
Put the cucumber in a strainer and
sprinkle with the salt. Drain and squeeze well, trying to
release as much liquid as possible. In a separate bowl, mix
the crushed garlic with the oil and vinegar. Add the drained
cucumber and mix well. Add in the yogurt, folding it in
carefully, Don't stir vigorously, or you will make it watery.
Chill for a few hours or overnight to meld the flavors. Enjoy
