Baked Pork with
Lima Beans "Hoirino me Gigantes"

dish that is easy to prepare so you have time to join in the
festivities. |

Ingredients |

| 4-6 lb. Pork Leg,
with bone |
3 ribs celery,
chopped |
| 1 lb. dried lima
beans |
3 tbs. ground
cumin |
| 3 cups chopped
tomatoes |
yellow mustard |
| 1 large chopped
onion |
salt and pepper |
| 2 large chopped
carrots |
1/2 cup olive oil |
Soak the lima beans overnight in water. Wash and dry the pork
leg. Cover the meat in yellow mustard, salt and pepper and
cumin. Cover well and refrigerate.
The Next Day:
In a large roasting pot, add the drained Lima beans, onions,
tomatoes, carrots, celery and salt and pepper. Toss all the
vegetables together with the oil. Set the meat in the center,
and add enough water to cover the vegetables. Cover the pan
and set in an oven that has been preheated to 325°F.
Bake until meat is tender and the beans are cooked, adding
more water as needed.
Susie's note: This winter dish is best
served with a Lettuce Salad
topped with Greek Vinaigrette. |
