Beef with Orzo Macaroni

of our Poolside Taverna, is sharing with us her version of
this traditional Greek Specialty. |
Ingredients: |

| 2 lbs. tender
beef, cut into chunks |
1/2 cup dry white
wine |
| 1/2 cup butter |
2 cups chopped
tomatoes |
| 1 onion chopped |
salt and pepper |
| 500
gr. Orzo Macaroni (available at Greek Specialty Shops) |
In a large pot, heat the butter and brown the meat with the
onions until translucent. Add the wine, tomatoes, salt and
pepper and cook for about 1 hour on low heat.
In salted, boiling water cook
the orzo for about 15 minutes. Strain it and add 2 tbs. butter
and toss.
Mix the orzo with the beef
together in a large roasting pan. Bake covered at 350°F for 15
minutes.
And it's done ! Enjoy !
