  Greek Recipes

Pastry Dough


There are a few recipes for pastry dough, but this is the most common.


5 cups plain white flour a little salt
5 tbs. Oil 2 tbs. Vinegar
2 1/2 cups water  

Mix the flour, oil, water, salt and vinegar together, reserving a bit of flour for flouring the board on which the pastry will be rolled out on. Knead it well and form into a ball.

Allow to stand approximately 1 hour in a cool place.

On a floured surface, roll out the dough into a flat sheet as thin as desired.

Susie's note: This is a 'general purpose' pastry and can be used for many of the Greek recipes.
