Mix the flour, oil, water, salt
and vinegar together, reserving a bit of flour for flouring
the board on which the pastry will be rolled out on. Knead it
well and form into a ball.
Allow to stand approximately 1
hour in a cool place.
On a floured surface, roll out
the dough into a flat sheet as thin as desired.
This is a 'general purpose' pastry and can be used for many of
the Greek recipes.
