Island Chicken with Orzo
/ Kotopoulo me Kritharaki
A taste of the Greek Isles. Serve this
poultry dish with a green salad and a nice bottle of Greek wine.

Ingredients

| 1 2- 3 lb. roaster |
salt and pepper |
| 1 large onion,
minced |
2 cup chicken
stock |
| 2 cups crushed
tomatoes |
2 cups orzo (or
rice) |
| 2 tbs oregano |
|
Salt and pepper the chicken. Rub
with oregano and the minced onion, and cover with the
tomatoes. Refrigerate overnight.
Preheat the oven to 350°F. Put the chicken in a roasting
pan. Add the stock and bake covered for about 20 minutes. Add
the orzo and mix well with the juices. Bake covered for
another 20 minutes. You may have to add more stock as the orzo
cooks. |
