A beautiful zesty chicken bake.
|1 chicken (1 1/2
||5 crushed garlic
|2 kilos potatoes
||1/4 cup olive oil
||fresh lemon juice
|salt and pepper
||3 tbs. oregano
Clean and wash the chicken and cut
it up into serving pieces. Mix the marinade, and toss the
chicken with it to coat all the pieces. Chill, covered in the
refrigerator over night.
Peel and slice the potatoes into wedges and put into a
large casserole pan. Arrange the chicken over the potatoes,
and add the marinade. Bake at 350°F for about 50 - 60 minutes.
If needed, you can add more water to the pan until the
potatoes become tender.
