Grape Spoon Sweet
" Stafili Glyko"
A traditional sweet made at the
end of summer when there are literaly " tons of grapes". It is
served plain, spooned in a dish, with a cup of thick Greek
coffee when company calls.For you westerners, this is great with peanut butter as a
sandwich !

Ingredients

| 2 pounds seedless
white grapes |
2 cinnamon sticks |
| 1 1/2 pounds sugar |
1 tablespoon lemon
juice |
Remove the stems from the grapes
and wash under cold running water. Drain well in a colander.
In a deep pot, put the grapes, sugar, and 3/4 cup cold water.
Cook at medium heat, stirring occasionaly until the sugar
disolves. Add the cinnamon and increase heat to moderate, and
remove any froth that collects on top. Cook until the syrup is
thick or a candy thermometer reads 220°. Stir in the lemon
juice and remove from the heat. Cool and put into sterilized
jars. |
