Red Sauce for Fish / Saltsa gia Psari

A sauce that can be used over any variety of fish or seafood.




1/2 cup olive oil 1 chopped onion
1 clove garlic 2 carrots, chopped or shredded
1/2 cup chopped fresh parsley 1/4 cup chopped celery
1 tbs. flour 4 chopped fresh tomatoes
1 cup fish stock juice of 1 lemon
salt and pepper to taste  

In a pot heat the oil and saut the onions with the garlic. Add the carrots, parsley and celery and cook for 5 minutes. Add the flour and stirring constantly, saut for a few minutes longer. Add the tomatoes and the fish stock and cook over medium heat until the vegetables are very well done.

Using a blender or food processor, puree the mixture and return it to the pot and cook it down, over medium heat until it is thick. Remove from the heat and stir in the lemon juice.
