Jack's Tuna Sauce /

Jack Iakoumakis, from the chef has been keeping secrets - he likes to cook. So here
is his own recipe for a Tuna Sauce which is out of this world!
It can be served with Rice, Pasta or anything that takes your
fancy.
Ingredients

| 1 cup olive oil |
1 cup dry white
wine |
| 2 tbs. butter |
2 cups chopped
tomatoes |
| 2 green peppers,
chopped |
1 1/2 lb. canned
tuna fish, drained |
| 2 onions, chopped |
salt and pepper |
| 2 cups mushrooms,
sliced |
oregano |
| 5 garlic cloves,
chopped |
Tabasco |
| 3 hot peppers,
chopped |
1 tbs. corn flour |
| 1 cup chopped
parsley |

In a large pot, heat the oil and
butter together. Add the onions, green peppers, mushrooms,
garlic, parsley and hot peppers and sautι until tender and
translucent.
Pour in the wine and tomatoes
and 1 cup of water. Add salt and pepper, a good sprinkle of
oregano and a few dashes of Tabasco and simmer for about 1/2
hour.
Mix the corn flour with 1/2 cup
of cold water and pour into the sauce to thicken it. Add the
drained tuna and cook just long enough to heat through,
stirring gently.
And there you have it.

Jack made this for us with Pasta topped off with lots of
grated cheese. Excellent Sauce! |
