Mussels with Rice / Midia Pilafi

This main dish can be served on it's own or as a special side dish.



2 kilos mussels 3 cloves crushed garlic
2 cups long grain rice 2 large chopped green peppers
1/2 cup olive oil salt and pepper
2 large chopped onions 6 cups chicken broth

Clean the mussels, using a wire brush and a small knife to scrape them and remove their beards. Wash them in cold water, drain and rinse. Discard any opened mussels.

In a deep saucepan, fry the onions, garlic and green peppers in the oil until tender. Add the broth, salt and pepper and rice and boil for 10 minutes. Reduce heat, add the cleaned mussels and simmer for another 10 - 15 minutes until the mussels open and the rice is done.
