Mussels and Feta
This recipe is from our
friend Art.
A truly awesome way of cooking mussels.
Ingredients

| 2 - 3 lbs. fresh
mussels |
4 tblsp.
Worcestershire Sauce |
| 1/2 lb. feta
cheese |
3 heaped tblsp.
granulated chicken stock |
| 6 - 8 medium sized
tomatoes chopped |
1 can smoked
mussels |
| 6 medium sized
onions sliced thinly |
1/3 cup chopped
parsley |
| 4 - 6 garlic
cloves minced |
1/3 cup olive oil |
| 1 1/2 cups catsup |
3 - 4 dashes hot
sauce to taste |
| 1 cup water |
1 tblsp. seasoned
salt |
| 2 - 3 lemons,
juiced |

Heat the oil in a large heavy pot
or skillet. Sautι the onions until clear, add the tomatoes and
garlic and simmer for about 15 - 20 minutes. Add the catsup
and water and stir until blended. Continue to stir while
adding the chicken stock, Worcestershire Sauce, lemon juice,
parsley and seasoning. Add the fresh and smoked mussels and
simmer, covered, over a medium heat until the fresh mussels
open wide and become a dark pink. Crumble the feta into the
pot and simmer until the feta begins to soften, but do not
let it melt.
Serve with rice or pasta, and
Greek bread of course!!
