Sea Food Main Dishes
/ Oktapodi me Macaronaki
kinds of seafood are enjoyed during the season of Lent and
many creative recipes exist to spruce things up a bit. This is
one of them.
|2 lbs. octopus
cleaned and cut into medium pieces.
||1 1/2 cups olive
|1 bay leaf
||1 chopped onion
|2 cups chopped
|1 cup white wine
||1 package elbow
In a large saucepan, add one cup of
water, the bay leaf and the octopus. Cover it and cook for
about 20 minutes. Remove the cover and let the water
evaporate. Add the oil and onion and sauté. Add the wine,
tomatoes and the pepper. Bring it to a boil. It will take some
time before the octopus becomes tender so add water
accordingly and stir occasionally. When the octopus has
softened, add the macaroni and let it cook in the sauce over
medium heat. Again, add water if needed.
Susie’s Note: Because
octopus is already salty, taste it before you add salt.
