In a skillet, heat the oil, and
cook the onions until translucent. Add the rest of the sauce
ingredients and cook, stirring occasionally, until the sauce
thickens.
Pre-heat oven to 450°F.
In another skillet, heat the
oil and sear the shrimp, about 1 minute. When they turn pink,
remove them to a bowl and toss them with the lemon juice.
In a baking dish, pour some
sauce into the bottom. Arrange the shrimp in a layer over it
and top it with the rest of the sauce. Arrange the tomato
slices over this and top it off with the feta. Bake it for
about 15 minutes, until the feta begins to melt.

This is a very pretty casserole and can be served with a Pilaf
or potatoes and a nice salad. |
