Beef Stew with
Peas / Moshari

A
delicious stew that is an easy one-pot meal or "make ahead"
dinner.

Ingredients: |

| 1 kilo of stewing
beef, cubed. |
1 tsp. thyme |
| 1 cup olive oil |
1 large bay leaf |
| 1 large chopped
onion |
2 cups of crushed
tomatoes |
| 2 garlic cloves,
crushed |
1 kilo potatoes,
peeled and cut into 1 inch cubes |
| salt & pepper to
taste |
1/2 kilo of peas
(fresh or frozen) |
| 1 tsp. oregano |

Salt and pepper the beef chunks.
In a large pot, heat the olive oil and add the beef, browning
it on all sides. Add the onions and garlic and continue to fry
until the onions seem tender. Add the tomatoes and spices and
stir well. Reduce the heat and simmer the beef, covered until
tender - about 1-1 1/2 hours. You may need to add water as it
evaporates.
When the meat seems ready, add the potatoes and peas. Simmer
it all together for about 20 minutes or until the potatoes are
done.
Susie's note: Any meat can be used in this
stew, including poultry. |
