Stewed Beef with
Potatoes/ Moshari me Patates Giahni

This is a
traditional winter favorite. It is usually made with baby
goat, but beef is just as good.
Ingredients |

| 2 lbs. stewing
beef, cut into 1 inch cubes. |
2 cups chopped
tomatoes |
| 1 cup olive oil |
2 bay leaves |
| 1 large onion,
chopped |
2 lbs. potatoes,
peeled and cut into large chunks |
| 4 cups strong beef
broth |
salt and pepper |
Salt and pepper the beef cubes. Heat the oil in a large pot,
add the beef chunks and toss until browned. Add the onions
and sautι until translucent. Pour in the broth, tomatoes, bay
leaves and salt and pepper and bring to a boil. Reduce the
heat and cover lightly. Simmer until meat is tender, adding
water as needed. Add the potato chunks and simmer for another
1/2 hour.
Susie's Note: When the potatoes are almost
done, you may want to remove the lid and cook down the sauce
for a thicker stew. Serve this with lots of fresh bread, Feta
and olives. |
