Lentils with Rice

Though this dish
may have once been considered a poor mans meal, today it is an
Island favorite and very easy to prepare.
Ingredients |

| 1lb. dried lentils |
salt and pepper |
| 1/2 lb. rice |
olive oil |
| 3 onions, chopped |

In a large pot, simmer the lentils in salted water. When
they are almost done, add the rice and the salt and pepper to
taste. Add enough water so the rice doesn't stick, but you
want the mixture to be thick. When it's done, remove from the
heat and set aside.
In a large skillet, heat enough olive oil to cover the
bottom about 1/2 inch. Add the onions and sautι until golden
brown. Pour the oil and onions into the lentils and mix well.
Susie's Note: In the Islands we serve raw
onions - spring or dried, olives and smoked herring or 'Renka'
as an accompaniment to this dish. |
